Foods that Freeze Well When preparing a meal or treat, freezing extra portions for another day can be a real convenience. Cooked meatballs and cubed cooked chicken are great to have on hand to whip up a quick dinner meal. Here are a few of my favorite foods to have on hand in the freezer (Click the links to see the related recipes): Cookie Dough - Place one-inch balls of cookie dough on a plate or tray and freeze. Transfer frozen cookie dough balls into a large freezer bag. Add one or two minutes to baking time when baking frozen cookie dough. Cupcakes - Place frosted cupcakes on a plate or tray and freeze. Transfer frozen cupcakes into a freezer bag to have on hand for birthday celebrations and other special occasions. Cupcakes defrost at room temperature in less than a half hour. A frozen cupcake placed in a lunchbox at breakfast time will make a perfect lunch time treat. Rice - I love brown rice, but it takes 45 minutes to cook. Try this: Make a big batch of rice. Then save the extra portions in freezer bags. Stack several bags flat in the freezer. A quart bag of frozen cooked rice takes only 2-3 minutes to reheat in the microwave. Bread Crumbs - Break any variety of day old bread in pieces and place in a blender. Blend pieces to make a fine crumb. Store bread crumbs in freezer bag to use for meatloaf, breaded chicken, and to top casseroles. Broth - Save the juice from beef roasts and poultry. Pour drippings into a cup and skim fat off the top. Then pour the skimmed drippings in an ice cube tray. When this concentrated broth is frozen, transfer the cubes to freezer bags. Use one cube per cup of water to flavor soups, rice, casseroles and gravies.
